Why don't you go VR instead? It's more immersible and probably similar hardware requirements. 

 

Speaking if that, I don't think you should get anything under a 7900XT or RTX3080. CPU wise a 7800X3D is probably best.

Motion sickness, lax VR support on a lot of still desirable titles, and also inability to see the wheel.

Going with 7000 series Radeon would be more beneficial here. The nvidia decision to only support 1.4a instead of 2.0 Displayport makes it a pretty ass time to setup if OP is looking at high resolution triple monitor setup. Also, Assetto Corsa is a common title to play in sim racing and their physics implementation heavily benefits from high cache count so 7800X3D would make sense.
