Budget (including currency): $300

Country: Texas, US

Games, programs or workloads that it will be used for: So I am trying to upgrade my Unraid server used for Plex Media Server, photo storage, and the supporting apps.

Other details I currently have a Dual AMD Opteron 6276 setup(eats power like an all you can eat buffet). Would a I3-12100T or i5-12500T be a good upgrade, while saving power.

it really depends on how much transcoding you are doing, the 12100 has a >12000 passmark score so it would be good for a single 4k to 1080p live transcode, if you are just playing back files at stored quality it would be more than enough. If you are transcoding multiple 1080p streams from higher resolutions I'd go for the 12500 just to get a little extra headroom.
Personally I run 2-4x 4k and 1080p streams (not transcoded) on a 2600X and it's way overkill for the system, a 10100 would be more than enough for my use but I had the 2600X from a previous system so it made sense to reuse.

Thanks, so the i3 would be fine if I have plex pass?

I was looking at this https://gadgetversus.com/processor/amd-opteron-6276-vs-intel-core-i3-12100t/ and it looks like the i3 kicks the opterons a$$... and I never see my Opterons over 20% cpu usage.

The most I have ever seen connected Without transcoding has been 5 (Transcoding is currently turned off.)
