Hey guys ,
I’d just like an upgrade  that will last and will get me the most bang for my buck . Ideally I’d like my pc’s performance to be comparable if not a bit better to the new gen consoles . 
My current build consists of the following:

CPU : Intel i7 6700k
Gpu : MSI GeForce GTX1070 8GB Gaming X
Motherboard : MSI Z170A-G45 GAMING
RAM : 2x8gbCorsair vengeance lpx 2133MHz
AIO : Corsair H80i v2
PSU : Cooler Master G750M 80 plus Bronze
Storage : 1x240gb Corsair Force LE , 2x1tb WD Blue

Case : Cooler master Mastercase pro 5

Frankly it's pretty close.  The 1070 isn't too shabby, but if anything you could get a 6600xt and you'd be a little faster than a console, and with a 6700xt you'd be significantly faster than a console.  The 6700k is a little faster at single core tasks than the CPU in the consoles (downclocked 3700x), but it's a lower core-count.  This isn't really an issue, as the 8-coreCPUs in those console do not even come close to being fully utilized.

 

So yeah, a 6700xt would put you well above console specs, everything else is good to go.

You can also try to OC your RAM to 2400MHz or 2666MHz, if it doesn't work 2133 is still fine for the 6700k.  You can also OC that 6700k pretty well with an H80 as the cooler, there are plenty of guides for doing this.

One other thing, 16Gb of RAM is fine, but if you want more make sure to get a matching kit to the kit you already have.  Buying it used its fine (it's just RAM) and will save you a decent amount of money.
