If its possible to stretch the buget to 1700 AUD you have a banger PC.

Budget (including currency): around 1500 AUD

Country: Australia

Games, programs or workloads that it will be used for: Elden ring, various indie/sandbox games, Fortnite and other battle royal type games.

Other details (existing parts lists, whether any peripherals are needed, what you're upgrading from, when you're going to buy, what resolution and refresh rate you want to play at, etc):

CPU     Intel Core i5-12600KF 3.7 GHz 10-Core Processor
CPU Cooler     Thermaltake TOUGHAIR 510 58.35 CFM CPU Cooler
Motherboard     Asus PRIME Z690-P D4 ATX LGA1700 Motherboard
Memory     G.Skill Ripjaws V 16 GB (2 x 8 GB) DDR4-3600 CL16 Memory

Storage     PNY CS1030 1 TB M.2-2280 PCIe 3.0 X4 NVME Solid State Drive

Video Card     NVIDIA Founders Edition GeForce RTX 3070 8 GB Video Card

Case     NZXT H510 Flow ATX Mid Tower Case
Power Supply     ARESGAME AGV 650 W 80+ Bronze Certified ATX Power Supply

Looking for advice on ways to improve or maybe even decrease price, not a huge deal but who doesn't like saving money. Buying around this time of year and intending to use at least somewhat over the holidays. Looking for high/ultra settings on most games at 144fps preferably but at least 60fps for more AAA titles and mainly 1080p but sometimes 1440p. The hardest game I will be running will most likely be elden ring and all other titles that peak my interest are fairly low requirements. Current total is around $1600AUD. In total looking for around a $2000 setup and not really looking for expensive peripherals so not a concern.

I believe you were using the United States PCPartPicker... the equivalent of that build approached $2,000 when I did it for Australia.

Here is my improvised $1,500 AUD build: https://au.pcpartpicker.com/list/K3HTxs

You could technically squeeze in a 3070 if you cheap out hard on other components, but obviously there's a reason I didn't do that.

Definitely possible to stretch, the reason I was going for an rtx 3070 was I had seen solid deals on ebay and don't need a brand new one cause shouldn't change performance. Also PC part picker's prices were out of date when I compared them to other places.
