(Possibly) a stupid memory question

but if I change the RAM speed to the 3200, is there anything that needs to be changed to support that setting?

If you aren't enabling XMP, you will at the least set the DRAM voltage to the rated voltage of the memory kit (almost certainly 1.35V), and it's probably a good idea to set the DRAM timings to the rated settings of the kit (this will be on the packaging, and the order is tCL-tRCD-tRP-tRAS).

If you enable XMP as you should, you don't need to do anything, just set XMP to profile 1 and boot to the OS and verify it's working with CPU-Z.

So I built a modern AMD Ryzen 5 5600g system, using the Deskmeet x300 ITX(ish) unit.

Bought some XPG (by Adata) 2x8GB DDR4 3200Mhz RAM.

So far, so good, everything posts and is happy. BIOS lists the RAM under "Auto" settings as 2666Mhz, with the option to manually change it.

Safe to assume the 3200 list speed is based on XMP/DOCP settings...or am I missing something?

Yes.

Thank you. I realize you may not be able to answer this question, since I'm posting no screen shots (system isn't fully complete yet, booting off the iGPU) but if I change the RAM speed to the 3200, is there anything that needs to be changed to support that setting?
