I want to use a 5600g and apparently both chipset support it after a bios update but I don't know which mobo choose. A320 is cheaper, and seems like mobo doesn't affect fps. But A320 has 4 gen3 Pcie lanes and B450 has 6, and modern gpus are gen4 with 8 lanes so I don't know how much will the performance of any gpu upgrade be affected. If both mobos will cause similar loss in performance and two extra lanes doesn't mean much then I think A320 is good.

Key factor: A320 does not allow overclocking of your CPU/APU. I'm not 100% positive on RAM, and haven't really looked into that. A320 is like the Intel HX10 chipset. Bottom of the barrel, minimal features, made only for the most barebones of systems. If that's all you need, cool, but if you might need more or want to look into a beefier processor down the line (A320 boards tend to have ass for power delivery), spend the extra few bucks on B450.

I enjoy buying junk and sinking more money than it's worth into it to make it less junk.

It depends.  It doesn't allow for normal overclocking, but most a320 boards can do BLCK overclocking that works well enough for 99 percent of users.  Also, boost clocks on new CPUs are good enough that you don't need to overclock them.  A 5600 on a320 shouldn't incur any noticeable deficit from b450.  But it you are a US shopper. the Gigabyte DS3H V2 is only like $10 more than any of the basic a320 boards, and m.2 port, heatsinks on the VRMs, and 4 RAM slots should be worth that alone.
