DDR4, no point in DDR5.  Also, why must it be z690?  The only benefit of z690 is overclocking, and the 12700k will turbo to speeds way faster than any game can benefit from.  You'd be far wiser to just save your money and get a b660 motherboard.

I edit the shit out of my posts.  Refresh before you respond.

What type of editing?

DDR4-3200 CL16

MSI PRO Z690-A (WiFi) DDR4, Asus Prime Z690-P (WiFi) D4

Higher-end MSI MAG Z690 Tomahawk WiFi DDR4, Asus ROG STRIX Z699-A Gaming WiFi D4

All NVMe storage

DDR5 does offer performance advantages in Premiere Pro and Aftereffects. However, using more than 64GB or 2 sticks can be problematic. Speeds are improving and prices are falling. DDR5-5600 CL30 or better would be good but even DDR5-5200 CL36 would be fine.

DDR5 is still new enough that verifying kits on motherboard or memory manufacturer QVL is prudent.

Pretty much any Z690 motherboard will do. Certainly the DDR5 models of previously mentioned motherboards would be suitable. Consider also the Asus ProArt Z690-Creator.
