Games, programs or workloads that it will be used for: 
Any games, that can differ from Strategy games (like Cities: Skylines) to FPS (Like Valorant,  and Apex) to Survival/Action-Adventure games (Like Valheim, SOT, Ark, No man's sky) and mutch more.

It would also be great if it could run some music-creation software and normal PC stuff. (A great all-round PC with the main focus on gaming)


Other details (existing parts lists, whether any peripherals are needed, what you're upgrading from, when you're going to buy, what resolution and refresh rate you want to play at, etc): 
Resolution: at least 1440p;
Old system: Asus Tuf laptop with Ryzen 7 3750H, GTX 1650, 8GB RAM, 512GB storage + 2TB later added Samsung SATA SSD (want to remove from laptop and add to new pc);

I am going to buy a windows key via a cheap vendor (sugestions?)

No peripherals are needed. 
I would like to know if I am missing any incompatibilities or anything obvious or if something is extremely overkill or a huge bottleneck

Unless you really want to play with CPU overclocking, consider a locked i7-12700F. With good cooling and appropriate settings gaming performance is within a few percent of the unlocked model.

 

Consider a better NVMe drive and an 850W PSU.
