Maybe you should rather clarify what you want to do with this Server?

I am asking because dual i5's isn't a thing and dual CPUs is generally not something i'd recommend in a time where 16 core CPUs exist

for consumer. 

With 3 PCIe Lanes i guess you mean 3 PCIe 16x slots, right? 

Also, what's your budget?

So, im planing to run proxmox and then run some vm's, such like home assistant, plex, ubuntu server, jellyfin, pi hole, etc...

For the 2 CPU choice, its because i need to have good performance and a lot of cores, in order to allocate them to the vm's.

About the redundant power suply, I want that feature because i want to conect the first one on the grid and the second one on a UPS, for security.

I also want to have at least 3 pcie lanes (Yes, PCIe 16x slots) in order to add more equipment when needed.

I think you are vastly overestimating what you think you need for cores. Vm's can share cores without issue.

Absolutely no need for dual CPU, if you're using a decent enough CPU. 

 

home assistant, pihole, ubuntu (just the OS) are very low usage and can easily share a few cores. 

Jellyfin/Plex, if you have hardware transcoding then like 2 cores is enough...if you're doing software (CPU) then you can probably get by with 4 if its just a couple of transcode streams at a time. Outside of transcoding it really just needs the cores for transcoding audio, library scraping/metadata, and intro detection (plex)

What is your budget for this server?

Since you're planning to run proxmox and run a media server, are you going to be doing ZFS or LinuxRAID? Or do you want a RAID card as well? 

How much storage are you after?

What's the point of redundant PSU's for a home hobbyist server like this? There are redundant ATX PSU's but theyre prohibitively expensive, so you'd really be restricted to enterprise server barebones/systems.
