The 12700K will take advantage of the new scheduler found on Windows 11 so it will end up with the most consistent performance, but that's not to say performance will be bad on Windows 10 and if you really don't like the UI on Windows 11 or any of the Microsoft BS found on there, I wouldn't fault you for wanting to stick to Windows 10.

That's the main one, forced Microsoft accounts and ads in the start menu.

Ads in the start, my pihole should block those though

Nope. The ads that are there are for apps you can install through the Microsoft Store, they look like normally installed apps and AFAIK they come through Microsoft's same channels they use for stuff like updates so PiHole can't block them. The same ads are in Windows 10 as well inside the live tiles, they're just a lot easier to disable on Windows 10.

There are ways to disable them with registry tweaks, though it's annoying to have to fix and it can theoretically be broken by a Windows update.

All the evil can be rooted out from even 11

I've never seen any suggestions/ads at all.

With tools like: https://www.oo-software.com/en/shutup10

All options from this app that actually does something and not theatre, are found under Settings or their respective apps.

Suggested Tiles.

They're still ads designed to get people to click on them. Call them something else if you want, but they're still ads.
