i can buy 2 and have 32 Gb in quad channe

Not how it works. You'll have 4 DIMMs and guaranteed to have effectively dual rank memory (performance uplift similar to about 200MHz increase in clock speed), but you'll also be risking getting two different memory ICs on there and not be able to run high memory speeds, plus you'll have to get an entirely different RAM kit if you want to upgrade capacity in the future.

I'd get the TeamGroup 2x16GB 3200MHz kit. The 5600X doesn't benefit from high FCLK like other Ryzen CPUs since it's a single CCD, and the benefits of dual rank IMO aren't worth the risk of the two kits not working together (small, especially at 3200MHz, but it does exist).

Budget (including currency): 130 USD

Country: Panama

Games, programs or workloads that it will be used for: I play a bit of everything but am upgrading my pc mainly because i want to play sim games like arma 3, star citizen, F1, Dirt, etc... and am probably moving to another country for college so I want my pc updated.

I currently have a Ryzen 5 3600 with a Asrock B450M-HDV R4.0 and 16 Gb Ram at 3000 MHz at dual channel. My plan is buying this mother: amazon.com/-/es/gp/product/B08L74NCPQ/ref=ewc_pr_img_1?smid=ATVPDKIKX0DER&th=1

And this 2x16 Gb ram at 3600: amazon.com/-/es/gp/product/B07ZPLM1R1/ref=ewc_pr_img_2?smid=ATVPDKIKX0DER&th=1

Then with the money i get by selling my old parts buy a Ryzen 5 5600x, but the thing is i notice this 2x16 Gb ram at 3200 that is cheaper: amazon.com/dp/B08NVQZ9XQ?tag=pcpapi-20&linkCode=ogi&th=1

but they also have this other pack of 2x8 Gb ram at 3200, i can buy 2 and have 32 Gb in quad channel: amazon.com/dp/B08PJNVWNZ?tag=pcpapi-20&linkCode=ogi&th=1

Do i choose quad over dual channel?

I've seen many videos on the subject but it's still not clear to me.

any other recommendations?
