Budget (including currency): $1000 - $1750 USD

Games, programs or workloads that it will be used for: Mostly for games, but not super intensive games. Going to be my home computer I hope to use for a long time.

Other details (existing parts lists, whether any peripherals are needed, what you're upgrading from, when you're going to buy, what resolution and refresh rate you want to play at, etc): 

 

I have some cash to spare so I'm willing to buy a fairly nice system that ill use for many years. Is it worth going to a 12th gen CPU and using DDR5 or does that not make that big of a difference for an average gamer? Also should I consider finding a cheaper graphics card and if so what would you recomend?

12th gen, yes, DDR5 no. 12th gen is a pretty large IPC improvement over 11th gen, and it does produce less heat so it's easier to cool (excluding the top end chips). DDR5, however, has very little performance improvements in gaming workloads, even some performance regressions in some particularly latency sensitive workloads. The i5 12400 is likely cheaper and just as fast as the 11600K, but comes with a good enough stock cooler and you can use the cheaper B660 boards instead.

This isn't a particularly good value drive, since it's DRAM-less for the price of drives with DRAM. Either save money with a cheaper drive that will perform just as well, or go for something faster for the same price.

This has had issues in the past with 30 series cards (albeit high end 30 series cards, but still). I'd want something different if you're aiming for an 850W unit, either that or drop down to a better 750W unit.

The P360A is cheaper and comes with more fans (plus RGB if you care about that). I'd go for that instead.

Depends on how much you're spending on that GPU, though an RX 6600 XT/6650XT would be a good option to swap to, they're usually quite a bit cheaper and they aren't really that much slower.

12th gen cpu, they made so many upgrades its not even a question

Arctic freezer 34 Esports Duo, Great Cooler, on par with scythe fuma 2 for a little less

2x8 cl16 3200, a 3200 cl 16 stick of ram should run about the same as a 3600 cl18 stick, also DDR5 is NOT worth it, it still has issues with pc's and for the average gamer you wouldnt even see a boost in performance as most DDR4 sticks run on par with (if not better than) low end DDR5 (which is what you would probs be getting on a budget)

2tb storage, Samsung 980 is a good drive but overpriced, you can get a cheaper drive that will work similarly for way less.

RX 6750 XT, ON AN AMAZING LOW, this card is a little better than 3060TI (on par with 3070TI) and it is extremely cheap rn

Cheaper case, your case wasn't bad but its expensive and doesnt come with fans (that i know of) so you need those seperate, this one is decent and comes with fans pre installed.

Better specced PSU, 750w is enough for this pc, 850 is way overspeccing and over spending, i got you an A tier rated PSU on the PSU cultists list

TOTAL:$1447.90 usd (mail in rebate rn so closer to 1427.90 if you buy rn) if you want to get better performance id recommend getting another set of ram, 4x8 32gb will be amazing, or if you can upgrade to 3070ti or 6800xt that would also increase performance (or wait till 4000 release, GPU prices are sure to fall more, and if you can get your hands on one of the 4000 series they will  be better than anything you can get currently, but those arent scheduled till fall or something), 12700f is good cpu aswell slightly better than 12600k (also not overclockable so no need for z690 board) 

Overall this pc should play most games at high FPS, it should last for a while and its completely upgradeable (in case you wanna upgrade to a newer 12th gen cpu or better gpu, or even more ram), as long as the case is in tact you can build a thousand pc's, lol

Bang for the buck, WD Blue SN570 is about the best thing going. WD Black SN750 / SN770 / SN850 are faster, but run hotter and the performance difference from the SN570 is nearly unnoticeable for most users, hardly worth the extra $100-$150 USD.
