New Laptop Help

I'm going to grad school soon and I need a new laptop. I have an old MSI gaming laptop from 2016, but it's too bulky, fragile, and the battery is garbage. I know a lot about PCs, but in finding a laptop, I'm completely overwhelmed. A shortlist of what I want:

 

Core i7 or Ryzen 7

16 GBs of RAM

512 GBs SSD, preferably NVME 

Maybe a touchscreen with a pen? What is the user experience typically like for a laptop like this? I'll be writing, not drawing

14 or 15 inches

The longer the battery life, the better

Budget of $1,000-1,200

 

All of my research brings me to the HP Envy x360. This might sound weird, but for the price, it seems a little too good to be true given the features and specs, especially if you can get it on sale. If I got the envy, I would customize it on HP's website and probably buy Memorial Day or July 4th as they are likely to have sales. I'm also leaning towards Ryzen, or would I be better to wait for 12th gen intel to reach the envy model line? I would appreciate some pointers as I'm a bit overwhelmed.
