I would personally get a slightly larger CPU cooler and better SSDs.

The U12s would probably struggle to cool a 127K under full load and the S7 is only a Moderate NVME on NewMaxx's SSD list.

I would suggest a 140mm tower - a decent one from Thermalright is about the same cost, for instance; as well as a better SSD, something along the lines of a Hynix P31, Crucial P5, HP EX920, etc.

Minor nitpicks, truthfully, but those parts felt out of place in a $2k+ build 🙂

Daily Driver: Redmi Book Pro 14 - Core Ultra 7 155H | 32GB/1TB

Primary Desktop: NCase M1 - Ryzen 7 7800X3D/RX 6950XT | 32GB/2TB

Travel PC: Fractal Terra - Ryzen 7 5800X/RTX 3060 Ti | 16GB/1TB

I have too many computers. List here.

Cooler is not enough for a 12700k. Those CPUs run hot, and pretty much need the dual tower coolers. Considering $80 is very close to the $100 of the NH-D15, you should spend the extra $20 and get the bigger cooler, or save $10-20 and get the Scythe Fuma 2 (when it comes back in stock).

I'd also go single 2TB drive instead of 2 1TB drives unless you were planning on running them in RAID 1. It's about the same price and you have less points of failure.

The Corsair RM750x is $20 more and a better PSU. Plus fully modular is very nice to have for building the system, and personally I won't touch a non-modular PSU anymore.

P5 is Gen 3, P5 Plus is Gen 4.

Solution for the PSU, get the Super Flower Leadex III Gold 750w. It's a similarly rated PSU for about the same price. Still fully modular.

They make an all black version of the NH-D15, I'm just not sure if it's currently in stock.

You asked a very subjective question with no details on what you would call "better looking fans." I've embraced Noctua colors, so I could consider the D15 a better looking cooler than the redux or chromax. You might think different though.

I'm not actually trying to be as grumpy as it seems.

I will find your mentions of Ikea or Gnome and I will /s post.

Two already got suggested. Anything wrong with them? If it's aesthetics, what don't you like about them?
