You can, and as long as the sticks are the same in terms of the memory chips and timings, they should work. There's no guarantee that the memory chips will be the same, even with the same brand and model, but it's likely.

 

Buying a 2x8GB kit would be ideal, but if the pricing doesn't make sense, it could be a worthwhile risk to try getting 2 individual 8GB sticks.

It's ok, if they have exactly the same specs. Like capacity, speed, voltage, CL and the rest of the timings. And ranks(single or dual/double). Usually we get a dual-channel kit to avoid mix and matches.
