I've never built a PC before, but I want to now, help! I code, compile and run heavy IDEs.

Budget (including currency): 2000 AUD

Country: Australia

Games, programs or workloads that it will be used for: Mostly for coding, compiling and running IDEs like android studio, IntelliJ IDEA, PyCharm, WebStorm, VSCode, probably a little server running in the background, maybe a proxy server.

Other details (existing parts lists, whether any peripherals are needed, what you're upgrading from, when you're going to buy, what resolution and refresh rate you want to play at, etc): I want to assemble the PC completely in the coming week, not focusing on graphics card; I want to invest that money in a better CPU, RAM, M.2 SSDs and also 2 good screens.

If you don't care about graphics and want power, and to run windows 10 (11 isn't working for me for some reason) copy my build, it doesn't have a m.2 though, so you could just find one and swap that in.

CPU Ryzen 9 3900x
Motherboard ROG Strix B550-E
RAM 32GB Vengeance LPX DDR4
GPU Gigabyte GT 730
Case White NZXT H510
Storage 2TB Samsung Sata SSD
PSU EVGA 600BQ
Display(s) MSI Optix MAG27CQ & ACER XZ342CK Pbmiiphx
Cooling 2x(NZXT AER P 120mm) & 2x(The free fans in H510)

Kinda forgot the price of it but it should be like 2k usd, you could cut down the monitors or swap them and get less ram and less storage to significantly reduce that price

edit: my bad i don't know Australian currency conversion

2k usd

2k USD is almost 2800 AUD. Close to 1.5x OP's budget. The 3900x alone is $800AUD new.

I'm not actually trying to be as grumpy as it seems.

I will find your mentions of Ikea or Gnome and I will /s post.

Hey, thanks a lot for this list ! But do you think I should get an average GPU or will the inbuilt GPU would be fine?

The r9 290 is going for $150 (US), with the X version going for $200 it is actually worth that much, because it is old enough to be passed over. It would be a good intermediate GPU, and it would be overkill for everything you are trying to play (in order to get a playable experience anyways). It can do Apex Legends High settings 50 FPS, and that is the non-X version. Apex isn't easy to run.

The iGPU can handle the displays so long as fps type games are not involved. Adding a low end GPU would enhance display speeds making for a smoother experience but I wouldn't sacrifice budget for one.

Kind of building off what @brobhad listed... You can go with an i7-11700, and the iGPU would be enough for coding. You can always add a dedicated gpu later, if you want to game. The iGPU should be able to handle some indie games and a good amount of older games though too.
