Firstly i am completely new to home building a PC so any help with parts will be incredibly helpful.

Upgrading from a pre-built Lenovo (unsure on specs) about 6 years old and can tell when running it that it's on it's last legs.

Preferably buy ASAP once I'm confident that all components will happily work together with no bottle necks.

Looking for 144 Hz

I realise i may have over done it in areas but i wanted to make sure that it'll stand the test of time as games are getting bigger and bigger.

Bottlenecks appear though usage not simply selecting parts. What you do with the machine will dictate where a bottleneck is regardless of the machine being used

so true.. but you can still tell it'll probably shut down or crash in games unexpectedly. 🙂

Well no stability would also be dictated by usage and not simply part selection. Unless the parts were specifically not made to be compatible or were obviously very low quality then determining stability would be speculation without actually testing it.
