Does FPS "control" input latency in Minecraft?

So, I'm doing some research on the topic from a recent with osu! of all places... The are two versions, but the one I was using was osu!lazer. And when I turned the FPS Display it showed me something interesting. While the game was only rendering 2x the refreshrate (60Hz = 120FPS) the input was at 1000FPS(Hz if you want). Raising the question. With more and more videos talking about FPS BOOST PRO MAX 5G PLUS FOLD, and if not all mice can get to, for exemple 1000Hz, why do so many people want to use Unlimited compared to limiting it to let's say 120FPS(I have a 125Hz mouse so I limit the FPS at 125)? Most say it feels smoother, but they also say that if you have a 60Hz Monitor.

 

So, what gives? Does more FPS mean less input lag, even if you mouse can't go further than 125Hz?

"Input lag" is a misused term, it's not used to refer to just the inputs but total "action to display" latency. Lower fps increases one of the many delays in the whole chain, so it increases "input lag".

Ok, that I know. The thing which I really want to know, is if you have a 60Hz Monitor and a 125Hz Mouse, is there any reason to go 500FPS for example?

If your own inputs are the only thing happening in the game maybe not, but that's rarely the case... You'd still gain by seeing other players, NPCs or other stuff happening independently of your actions a bit earlier and be able to start reacting to those quicker. Whether that's by a significant amount or not is up to the player.

Heavily depends on the software. It might interpolate the Mouses polling rate when the FPS is higher or it might not. That's a question of how the Software was desinged.

Edit:

In general the rate at which Information and inputs get processed can be unlinked from the framerate the game is running at and can be both higher and lower.
