Other details: I want to make a rack mounted Minecraft server that will run on Ubuntu. Server will only be used for Minecraft and eventually maybe a few other light workloads as well. I will only be running 1 world for myself and a few friends

Even if you already have that stuff, you still might be better off buying a retired server from a local government or someone. You can get them for incredibly cheap and have a ton more specs (I for example picked up a dual socket 2011 server with 64GB of ECC RAM and dual hexa core xeons for $120 a few months ago, rackmount 2U). the Hyve Zeus is usually on eBay for about $100 barebones, with a 1U chassis and coolers. Add in a couple $10 Xeons and 32GB of ECC RAM and you've got a really nice system for the price. 

 

That said, if you really want to use what you have or can't find a good deal on a server, everything looks fine. Just go used for the RAM since $75 for 8GB is crazy.
