Im pretty sure its thru the Mac OS App Store.

What Mac do you have? You should be able to find macOS Big Sur in the App Store.

I have an early 2007/2008 Imac, Not sure what version of Mac OS its running.

It has no app store.

Those iMacs cannot run macOS Big Sur. You might be able to get it running on a 2008 with a patcher (or possibly a 2007 if you upgrade the CPU), but I really wouldn't recommend it.

Yeah you need a 2014 model or later to install Big Sur according to Apple. 

 

Chances are, your Mac can run macOS Big Sur

The following models are supported:

• MacBook (2015 or later)
• MacBook Air (2013 or later)
• MacBook Pro (Late 2013 or later)
• Mac mini (2014 or later)
• iMac (2014 or later)
• iMac Pro (2017 or later)
• Mac Pro (2013 or later)

That depends on what iMac you actually have. Can you post the serial number? It's on the bottom of the stand.
