Games, programs or workloads that it will be used for: Beam.NG Drive, Trains: A New Era, Microsoft Flight Simulator 2020, Roblox, Minecraft (lol), mining dogecoin

Other details (existing parts lists, whether any peripherals are needed, what you're upgrading from, when you're going to buy, what resolution and refresh rate you want to play at, etc): I want to play 1080p, I'm upgrading from a mid 2012 (MAXED OUT) MacBook Pro (15 inch) that is my lap warmer   macs are pain

You have two options: a discrete GPU from a scalper, or an APU. The first will probably get you the better gaming system

it leaves you with $200-300 for a GPU, so something in the GTX 1060 range. You will also probably want to add in a HDD, but that's not something that needs to be done immediately.

It's using an APU and has a better CPU in general, but graphics performance in general is better. Plus, you get a hard drive, a better CPU cooler, and probably a better motherboard. it's up to you which to pick.
