I bought an Optiplex 9020 SFF with 1 year of Windows 10 coming pre-installed with the pc. After my 1 year has run out, I want to move to a version of Linux, as well as installing my new SSD along with it. I also have a very limited knowledge of any sort of coding and need a UI that is user-friendly, since I barely know a thing about it. Is there any version of Linux I should be running that is user-friendly and I can easily opperate? Should I also install my new SSD with the OS?

windows 10 has no time limit options, maybe you mis read either 1 year of some warranty, or add on software? either way, it will still work after a year.

Yup. As said above, if Windows is currently activated, there is no time mechanic that it will later become deactivated. 

 

That being said if you want to run Linux with that level of knowledge, PopOS! is a good option. LTT just did a video on this a week ago (among many other videos in the past).

Like @bmx6454I also have never heard of time limited Windows OS license... Maybe you meant Office 365? That does come with a time limited license.
As for which Linux OS to choose (if you still want to switch), LTT did a video recently and it had this pretty chart (with which I think most of us will agree):
