I'm using a Gigabye GA-Z77X-UD3H and currently my 3570k is at 1.2V @ 4.6 Ghz. I've been running Prime 95 for about 2 hours and it's still running. How long should I run it for? Currently getting temps maxing out at about 80C using a H100i, temps seem accurate for a 25 Celsius ambient?

Honestly if you have been running prime95 for 2 hours, chances are it is stable, but just to be on the safe side, I would do a 24 hour test just to make sure.

It is generally recommended to leave your system running 24 hours if you want to be absolutely sure you have 100% stable system. Your temps are somewhat OK (not the best I have seen  with this setup, but not the worst either - not everybody wins the silicon lottery).

I would run it for at least 12 hours to insure stability. If you have the time, I would run it for 24 hours.

It's when there's no hiccups in processing, so it doesn't send some buggy information that can cause a BSOD and such or make programs unstable.

I'll let it run until I go to sleep which will be 12 hours total and I'll mess with fan speeds, thanks for the idea.

I didn't expect the best temps though considering it's in a 200R with a ghetto fan mount on top of the case, was too lazy to Google if H100i would fit in a 200R " properly ", it works gets the job done and it's my sister's rig so she doesn't mind. Noctua's look pretty good in a pink room on top on a plain black case with poor ventilation.

Guys when overclocking , what exactly do we mean with the term "stable" ?

No BSOD or P95 crashing during the 24 hour test period. This means that the cpu will not make errors that will cause problems to your computer.

I don't know lol. I was just thinking it was making more heat because of low voltage for some reason but really consider into reapplying the thermal paste or something since I think those are way high temps for that overclock unless that's how hot Ivy Bridges get since I'm using a i5-2500K and I get 50-60C on 4.6GHZ.
