When u install an m.2 ssd, can you use a metal washer to screw it down or does it have to be plastic or nylon ?

Typically its a metal standoff and a metal screw.

Everything you need will come with the SSD.
If you really want to use additional metal washers, it's safer to use plastic ones.
If you only have metal ones, make sure, they doest touch any metal of the SSD's circuit board.

All ssd and motherboard brand always include everything that you need and most of them are metal,

So yeah it's perfectly save assuming it was a "normal" size

Your motherboard will definitely have the required tools for it. Don't worry about it.
