5800X. 6 cores is really only suitable for gaming and light productivity, and even that's changing soon. The next gen consoles are 8 core now, so especially cross platform titles are going to start requiring or just simply running better with 8 cores.

The split between a 5600 and a 5800 is an 11700k….Unless you can get whatever you want at msrp. 

Not a pro, not even very good.  I’m just old and have time currently.  Assuming I know a lot about computers can be a mistake.

The 5800 wasn’t well liked when it came out mostly because it’s msrp was high compared to the 5600 and 5900.  5900s became near impossible to get though so the 5800 gained ground. Might not be that bad a buy.  It’s a hair faster than an 11700k on average.  It depends what you are doing with it.  The question become which is a cheaper total after things like motherboard price and other crud is accounted for.

One thing that shouldn't be discounted when comparing the 11700K with the 5800X is that while the 11700K is technically cheaper, it needs better cooling than the 5800X, which means you potentially have some added cost there.

In addition to this, a low-end Z590 motherboard costs quite a bit (~$200 range IIRC), while you can get a B550 motherboard for cheaper.

Yup. Also there’s motherboard pricing.  It’s the total price that matters
