Honestly what i would build at that budget, but i would switch to an intel platform for a cheaper overall CPU setup for the same performance in gaming, and a better GPU to compensate loss in editing performance by GPU acceleration.

Since OP states that he is playing fortnite professionally I think zen 3 would be better here tbh
