I have a 7700k which I have delidded and is currently running it at 4,9 Ghz.

I'm thinking of upgrading to a ryzen 7 5800x.

I also have a 1080ti and 32gb 3200 mhz ram.

Do you guys think it's worth the upgrade?

I won't be buying a gpu for a long time since I can't get my hand on any.

If you can get it at MSRP, sure. If you can't, I wouldn't.

Might also be worth considering waiting until AM5. AM4 is essentially a dead socket.

I wouldn't bother quoting USD equivalencies if that's not what you pay in, they're irrelevant.

My previous statement still stands.

Do you feel the need to upgrade ? ... Is there something you can't do with your PC that would require a cpu upgrade ? ...

If the cpu is limiting you and the price is close to msrp then yes it would be worth it ... if you can wait then I would say no don't do it and save up that money

Right now is a bad time to upgrade; new chips on the way, skyrocketing prices, high demand, and so on. If your current rig isn't slowing you down in any massive way, I say wait. The 7700K and 1080ti are still very respectable parts.

Desktop - i5-9600KF @4.8GHz all core, MSI Z390-A PRO, 2x8GB Corsair Vengeance 3000MHz, MSI GTX 1660S OC 6GB, WD Blue 500GB M.2 SSD, Seagate Barracuda 2TB 7200RPM HDD

Laptop - ASUS ZenBook 14 with ScreenPad, i7-1165G7, Xe iGPU 96EU, 16GB Octa-Channel 4200MHz, MX450 2GB, 512GB SSD with 32GB Optane

Old Laptop 1 - HP Pavilion 15, A10-9600P, R5 iGPU, 8GB, R8 M445DX, 2TB HDD

Old Laptop 2 - HP Pavilion 15 TouchSmart, i3-3217U, Intel HD 4000, 4GB, 1TB HDD

iPad 2018 - 128GB

iPhone XR - 128GB

Not sure on this one. Really depends on budget I guess.

A 5800X is difficult to cool. That's it's #1 draw back. Most people reverting to under-volting, which if you have suffice cooling shouldn't be something to consider doing. So big water cooling will be needed. I generally recommend custom loop and full copper waterblocks for high end systems. Again... budget.

Missing out on threads? Well if your board supports an 8700K or 8086K, these are viable options. Also will use a de-lid like the 8700/8086K, but you're experienced and shouldn't be an issue. Sell the 7700K to make up the spending on the chip.

Other than that, a 7700K at 4.9ghz can really hold it's own on the gaming front. Just depends on the game and how many background tasks you're running. 8 threads is probably close to full utilization I'd imagine in some scenarios.
