mixing ram

Im looking to build a home server and cant afford to buy all the components at once so I am slowly upgrading my gaming pc and keeping the replaced components to build my server, next on my list is RAM im going from 2133 16gb to 3600 32gb. I have a dual channel mobo (ASUS Maximus Ranger VIII) and am wondering whether I should switch straight to a 2 DIMM at 3600 32gb or just populate all 4 slots with 2 8gb 2133 and 2 16gb 3600 all running at 2133 (assuming it runs stable). If the latter should I run each channel with one pair or run them crossed over (1x8gb 2133 & 1 16gb 3600 on each channel). Are there pro's & cons to each? I know motherboards used to only recognise all RAM as the smallest DIMM installed is this still the case?

Having 2 8GB sticks and 2 16GB sticks will result in a total of 48GB of memory.

I knew I had seen an LTT on this but couldnt find it on YT. So thats sort of what I expected, I'm confident my curent 2133 wont OC at the 3600mhz and I wont need to run with as much as 48GB of RAM but I do need somewhere around the 20ish so require an upgrade. But which will give me the most benefit running the 3600 at its rated speed or running 4 DIMMs at 2133? I would guess higher speed will be more effective as it would still be running on 2 channels but i just want to make sure I've understood correctly.
