Games, programs or workloads that it will be used for:  Cyberpunk, Shadow of the tomb raider, Forza, Red dead, Metro exodus and etc. All on high detail and raytracing

AMD Ryzen 5 3600 6 Core,12 Threads up to 4.2 GHz Max Boost: I found for $350 NZD (250 USD)

G.SKILL 16GB DDR4 3200Mhz (2 x 8GB) : I found for $150 NZD (110 USD)

Which case will you be using?

I would swap the AIO for an beefy air cooler, like: Noctua, Be Quiet, etc.

For the monitor, it is within the budget? or is it on a separate budget?

Change the 980 pro to 970 evo/evo plus. With this CPU you'd prolly be fine with the stock cooler that is included, unless you do hard OCing. Also, if you can, don't buy a GPU now, it's so grossly overpriced. Probably buy an Intel CPU like an 11500 with a b560 mobo and 3200 Mhz ram, use the iGPU and wait till the tide gets over.

Just add the cheapest RTX 3070 you can find. Prices in New Zealand are all over the place.
