In the good ol' days of last year, I'd have said a 5600 XT or 2060. You can't get either one now, though, or if you can, they'll be $500-600.

Anything from 1650S (or rx 5500xt), to rtx 3070 (or 6700xt).

 

Specifically, a 1660S, 2060S or 3060ti are one of the best combos for the R5 3600. As for the R5 2600, a 1650S or 1660 would be ideal.
