Budget (including currency): ~$2000 

Country: Canada

Games, programs or workloads that it will be used for: 1080p Gaming, Latest AAA titles including RDR2, Doom Eternal, and CoD: Cold War.  Possible room for 4k gaming in the future. Currently running 2 monitors (1080p 144hz : 1080p 60hz)

Other details (existing parts lists, whether any peripherals are needed, what you're upgrading from, when you're going to buy, what resolution and refresh rate you want to play at, etc): 
Currently upgrading from a i7-4770, GTX1060 MSI GamingX 6GB, 8GBx2 DDR3 RAM 2500 (currently running at 1333mHz, my mistake buying this RAM that I can't use with this motherboard), Memphis-B 2AF7 motherboard (CPU and motherboard are stock from the HP ENVY 700-249 I had acquired)
So far I have purchased my z390 AORUS Pro WIFI motherboard, along with the i7-9700k to match, Corsair RM650 Gold certified Fully Modular Power Supply, 8GBx2 DDR4 Corsair Vengeance 3600.
I was looking to finish it off with a Samsung 970 EVO plus m.2 nvme, a 2TB SSD, and obviously a graphics card to match the power I have so far. I have a second hand mid range tower I will be receiving from a friend.

 

My biggest question is what graphics card should I aim for if I want to get the most out of this setup, within a reasonable price range of ~$600 but will go as far as ~$1000 if the performance is worth it.

So far I have spent ~$1000 with taxes and shipping included on the parts I have now, (~$370 for i7-9700k, $275 for Motherboard, $135 RAM, $180 on PSU).

Looking forward to any recommendations or the possible roasting I am about to endure, as this is my first PC build.

you cant really buy a gpu right now

Why did you buy the 9700K? it's a pretty bad purchase in 2020/2021

It was $100 off on sale at the time I purchased it and comparing it to my 4770 it seemed like a no-brainer upgrade, is there anything worth returning the 9700k for that would fit the LGA1151 socket on my Aorus motherboard?

lack of HT, its on a dead platform.

no reason to go back to the 4770 tho
