So I finally got my system done, got a CPU cooler to replace the stock cooler, and now I am looking at the possibility of overclocking. I am completely clueless of what would be safe/unsafe to do once I give it an attempt so I am going to ask here instead, to be on the safe side 😄

While idle I have seen my temps be between 30 and 35 degress celcius and when under max load while running Cinebench R15, I get a maximum of 79 degress celcius.

I would try to stick under 75c under max load. With these temps I would stay away from overclocking.  IF you get a better cooler you could overclock depending on your vrm temps and how much vcore you have to feed to the cpu and temps of course.

These temps (max) seem a bit high for stock is your cooler mounted correctly? Idle is fine.

had a few others on the forum tell me that those temps are fine when running cinebench so I guess I will see what others think? the cooler is mounted fine

At above 75 its fine but thats getting near cpu degradation territory I wouldn't overclock.

Voltage is a major concern for degradation, not temperature.

Im more familiar with gpu overclocking does the same apply to gpus?

Yes, degradation with temperature is also not a thing in GPUs. Higher temperatures on GPUs or any soldered CPU is that risk of breaking solder joints or causing other physical connection issues. If you are pushing "high" voltages and running your card/bga CPUs at close to tjmax you are risking damaging your  components. You won't be killing CPUs with stock voltage with high temperatures as long as it's below tjmax.
