Getting New iPhone: Setup help requested.

I'm getting a new iPhone...moving from my trusty 5s to a new SE2020.
When I ordered it (from Apple.com) I checked the Verizon set up, since that's my carrier, but when it went to "contact Verizon" it couldn't, "but you can still set it up on your own or going to a verizon store".

SO, my question is... how do I set it up on my own? To I just pop the SIM card from the 5s and put it in the SE?

The website mentioned it advised going to Verizon to get a new SIM to make sure I get "newest features". Is that a better thing to do?

(related, will the 5s continue to work without a SIM..no phone/cellular, but as a device anyhow?)

I've lived my entire life just swapping the SIM between phones when I switch, and I've never run into any problems. I'm not sure what new features you'd get if you got a new SIM, but I guess it's probably still worth asking a customer service rep about. That way, you can determine whether it's actually something useful (which I doubt, it is Verizon after all), or just some marketing thing that's not worth your time.

Might get faster internet speeds with newer sims.

When I got my new Sim I was told that even though my phone isn't 5G (The sim is) I may get better LTE speeds with the new sim
