I'm looking to buy a new graphics card for my PC and am struggling to make a decision. I would like some of your opinions ore recommendations, please.

PC Specs:
CPU: Intel Core i7-7800X @ 3.50GHz (4GHz boost) [6 cores, 12 logical processors]
RAM: Dual channel 16GB DDR4 2666MHz (2 x 8GB) - looking to upgrade to 32GB soon
Boot Drive: 1TB SATA 6Gb/s SSD (read/write: 520 /400 MB/s) - looking to upgrade to a much faster M.2 NVME SSD soon

What I want to use the GPU for:
- Mostly focused on 1080p - 4K video editing. Not more than 4K
- Very light 1080p gaming.

Memory Speed: 14 Gbps
Memory Bandwidth: Up to 224 GB/s
= $280 USD (New)

(Prices are converted from my local currency; ZAR to USD)

I'm only starting out with video editing, so for the next year or so it will handle light workloads. With time the workload might increase, so I would like a GPU that would keep up with heavier workloads in the future. I don't really play games. If I do, it won't be serious and I would probably only dabble in it.

Which GPU listed above would be best for my purpose and perform the best over the next 5 years?

Are there any other, possibly better GPU's to consider within the $230 - $330 USD price range? I'm looking to buy new.

i really think the rx 580 would be the better option, since its a good bit faster than all of those gpu's while being cheaper? 

but again it really depends on availability and where you live

The 1660 super is the most powerful within the ones you mentioned and that's the one I would buy unless you can find something better on the used market and you don't mind getting a used one.
