Upgrade from the 2700x?

Should I upgrade my CPU (2700x) if I am planning on upgrading my Graphics card to a 5700xt? What about the 3070? 

If I need to upgrade for either, would the 3700x be sufficient? or if there a bottleneck somewhere else?

Really depends on the games you play, and the resolution/refresh rate. A 1440p 60Hz monitor with that 5700 XT and 2700X is gonna be fine 

I WILL find your ITX build thread, and I WILL recommend the SIlverstone Sugo SG13B

What if I have 3 Monitors? one 4k 60hz, one 1440p 144hz-165hz, and a normal 1080p 60hz monitor. I game on the 1440p monitor, use photoshop on the 4k, and Discord+Spotify on the 1080p. Would a 5700xt still work in that situation?

The 5700XT will always work, it's just a question of how effective is it being utilized. In your case, it won't cause bottleneck and will be utilized efficiently.

144Hz could be difficult in modern games, for a 2700X. What do you play most?

Csgo and modern warfare would benefit from a CPU upgrade
