Be more specific, what type of workloads what games.  (For example you want to play microsoft flight sim 2020 or I want to do 3d rendering.)

I think I would purchase a monitor that has 165-240hz with 1ms response time and maybe 4K idk

Well a 3070 won't be running a 4k display at 165hz.
