Load a save previous to when you spawned the cheese, if you can get that far.  If not, then try delete the save file with all the cheese spawned.

Do you have a save from before you spawned all the cheese?  If so then delete all saves after that one, save files are located here: C:\Users\[userName]\Documents\My Games\Skyrim\Saves

Then it sounds like you've got a problem with your mods.  Try deactivate the ones that could cause the most problems, if that doesn't work then deactivate all of them and see if the game is playable.  Running BOSS might help identify the problem.

Go the the sav folder and delete it

Always the fun part of running 95 mods is determining what's broken if you don't keep track. Modifying the rugs broke the water, etc.
