Ryzen 7 3800X isn't a great deal unless it's literally the same price as the 3700X, but the 3700X is an absolute beast for the price, especially for rendering.

ryzen 7 is good at handling rendering, but i would recommend waiting until the new cpus and gpus release as they could be better suited for your tasks, and even if you dont want to buy the new released stuff, previous generation cpus and gpus will become cheaper which should allow you to spend on something like  better cpu or more ram
