You can create images for those disks (either from your PC or from the PS3 itself).

 

PS3 game disks are blu-ray. But yes, you can rip them direct from the console.

We were talking about ripping PS1/2 games.

There are many guides on reddit, I believe there's a wiki on r/ps3homebrew that explains everything.

As long as your model isn't the latest slim with that disk cover that you need to move by hand, it can be jail broken. And yes, you can go back to the stock firmware if you wish.
