m.2 or 2.5? pcie or sata

660p/p1 are reasonble qlc drives.

mx500 and wd blue are good sata ssds.

Those would be my pick for cheaper ssds

And plenty of higher end nvmes, but will make almost no diference.

SATA SSD. M.2 would be a waste for my needs.  Sorry, shold have been more specific.

A 2tb SSD is like $200, any reason why a HDD wouldn't work?

Preference. No spinners for a few years.

I mean might as well get a m.2 nvme if you can, simmilar cost, and slightly faster, and lower overhead aswell

For a SATA SSD it would be ~$220 I would recommend this drive

For a NVMe SSD this one is only slightly more expensive, but a lot faster, but still a low end NVMe drive.
