x570 would make more sense.

I'm slightly more tempted to go with B550, because the case I'm using has a USB-C port at the front and I would like a mini-itx mobo with a usb 3.2 gen 2 header so that I could utilize the port... not a huge deal but there's only one mini-itx motherboard with all of that that also fits my other specs, and it's b550.

B550 does not supply PCIe gen 4 via the chipset, only gen 3, but still supports the 16x 4.0 lanes from the CPU for the graphics card and 4x for the NVMe drive.

As for power delivery, you just need something suitable for 16 cores as opposed to a good chipset. What's your budget? and what country?

you wouldn't need two headers for a mini ITX build

I WILL find your ITX build thread, and I WILL recommend the SIlverstone Sugo SG13B

Draws 400 watts under max load, for reference.

How many watts do I need?

I'm willing to pay however much it is to get a good motherboard lol, I'm doing a pretty high end build and I don't want to skimp out on something like a mobo. You're right though, I rarely use USB-C anyway lol, just thought that it could be useful or whatever. Let me know what I should go with.

X570 is older than b550 and the really good ones tend to cost more.  It’s technically more capable though.  The problem is itx.  There just aren’t very many itx x570 boards..  The more stuff that gets put on a board the more space is needed and itx doesn’t have a lot of space.  The x570 stuff tends to be larger.  X570 itx board did some weird compromises to make space.  There’s one iirc that actually uses an intel cooler instead of AMD because they needed the different hole placement.

Not a pro, not even very good.  I’m just old and have time currently.  Assuming I know a lot about computers can be a mistake.

I did actually manage to find two x570 Mini-ITX Boards, the Asus ROG Strix X570-I Gaming Mini ITX AM4 Motherboard, and the Gigabyte X570 I AORUS PRO WIFI Mini ITX AM4 Motherboard. Both meet my requirements, although they don't have usb 3.2 gen 2 headers. Oh well though, I rarely use that anyway.

So between those two, and a B550 board with usb 3.2 gen 2 headers or something, which would you recommend I go with? Either would work with my CPU.

I personally would rather have usb 3.2 than pcie4 to the chipset atm.  There is a bare chance that pcie4 to the motherboard chipset may eventually be a useful thing. It isn’t right now though.
