In simple terms, slim = less airflow, thick = more airflow. Slim fans are great if you have limited space on your case/radiator, or if you need a more compact cooling solution for aesthetic reasons. Thick fans will provide more airflow over your components, giving you better temperatures. If you've got the space in your case for thick fans, they're probably the better option. If you don't have much space in your case, go with the slim ones.

IN short:

 

There are two types of fans:

1. airflow fans - designed for max airflow (wide apart fins, usually slower speed, don't have much pushing power against a radiator)

2. SP fans - designed for max static pressure (tightly packed fins with tight tolerances against the circular frame, high speed, high pushing power traded for some airflow)

 

thickness usually isn't a great indicator of fan's performance, but thinner fans are usually airflow focused.

 

As for the size: 120mm is standard, 240 are big and usually airflow only
