Im just starting my 1st build and have kind of settled on the idea of using a rx 5600 xt....but when im looking at them theres so many options,

Red devil, gaming, thicc ll pro, thic lll pro, thicc lll ultra, mech oc, and thats just on a quick look.

What, if anything is the difference.

Planning on buying

Cpu : ryzen 5 3600

Motherboard: b450 tomahawk max

Memory: corsair vengeance Lpx  8gb x2

Psu: Seasonic Focus GX 650W Power Supply

The difference is usually either the cooler or the pcb quality or just looks in general 

You can check th GPU list in this subforum to decide which one is best for you

The motherboard of yours is very solid for a 3600, but I was having serious stability issues pairing vengeance 3600MHz (CMK16GX4M2D3600C18) with the same motherboard and a 3600X, ending up buying  Samsung B-die memories (F4-3200C14D-16GTZR) that are also optimized for Ryzen CPU.

Sorry for not contributing to your question though, but the GPU list that ohter members mentioned should be able to help you a little bit.
