3 weeks 5700xt OC reaching 78c and junction temp 98/100c , is that normal?

No, temp junction is normal. Your temps are okay. The GPU temp that you see (78*c) is the traditional sensor. That should be under 90 - the junction is the hotspot. It's always in the 90-100 range but only AMD cards display it since Nvidia hide that sensor to make the card appear cooler to less knowledgeable users. 

 

In short, you're fine. Enjoy you're card

First AMD ( Gigabyte  gaming OC )  card ever, and I'm a little bit worried with the temps while playing (Satisfactory), is that normal? Current fan speed is 1923/1960 rpm...

Yep looks reasonable, as long as the GPU temps do not reach the 90s it's mostly fine.
