I've been kinda looking at mics a little bit and was wondering what was recommended for various prices. I've been watching Julian Krause so I have a really good understanding of audio interfaces now, and I think i have a pretty good idea of which ones to get for various prices (beringher UMC22 -> audient evo 4 -> moto m2/NI Komplete Audio 1/2 -> universal audio apollo is my understanding, roughly). But he doesn't really cover microphones, and I couldn't find a channel that covered them in a mostly objective way. So my question was, what (XLR) mics are recommended for various price points? Say $50 -> $100 -> $250 -> $500 -> >$500.

CPU: AMD 3600X

GPU: Nvidia 3070 (planned)

motherboard: MSI B500-A PRO

memory: G Skill Ripjaws V 2x8 GB 3600Mhz CL16

PSU: EVGA B3 650@

Case: NZXT H510

wireless network adapter: intel ax200

Podcastage is fairly trusted, there's also a fairly large recommendations list in my signature regarding both interfaces and mics.

I'm not sure I agree with your understanding of the interface hierarchy but that's a very personal thing.
Remember also that there are no 'correct' mics or interfaces to buy, some sound great on some sources, others don't but that doesn't mean they're not great microphones. There are, however, certainly wrong microphones and interfaces.
