Use the new one. 10 series cards also got a new version of the encoder that helps a lot.

 

The big difference is x264 is software encoding, and NVENC is hardware encoding. As for why you should use that over the CPU (x264, or HEVC/x265) is because it has nearly no impact on gaming performance, whereas the CPU encoder could use up to all 8 cores (or 16 threads) to encode the video, and that would impact your gameplay. It is possible to set the program to only use so many cores/threads, but that's a whole 'nother other deal.
