Depends entirely on the performance target.

That being said, if this is a gaming PC and you're buying a new CPU for better performance, an 8 core is definitely more than you'd need. A Ryzen 5 3600 is likely to achieve the same performance.

I WILL find your ITX build thread, and I WILL recommend the SIlverstone Sugo SG13B

Draws 400 watts under max load, for reference.

It is a gaming PC and I am planning on upgrading my GPU in the future. My thought process was to get a strong CPU now and then upgrade to a better GPU in the future to match it. I honestly chose the processor completely on the name and number of cores. I currently have a Ryzen 5 1600 so I thought "3700x > 1600" and "8 cores > 6 cores." Would it still be nice to have 8 cores instead of 6, even if I don't really need them?

I would be careful with 8 cores on that board, whilst it runs great in a case with airflow, i can only show proof for 6 cores, 8 cores will run those VRM's much more than the 6 core will.

I guess? But like you said, you don't need them. 6 core 12 thread CPUs are quite strong on the gaming scene now and with 4000 series Ryzen available in the future, you might want to save now and get a next gen 8 (or 12) core CPU when you actually need the extra threads.

I see, so getting a 3700x might not be completely worth it. Would you recommend a Ryzen 5 3600x instead?

the 3600 non-X is excellent value for a gaming PC

The reason I want to start upgrading parts is because my PC is starting to get a little old. If I get the Ryzen 5 3600, when would I need to upgrade again?

You only need to upgrade when the performance doesn't meet your standards, and only time will tell when that happens.
