I do not want to take up 3 of the PCI slots with a 2.2 or 2.5 GPU board and with the need for more cooling for the new generation of GPU's and VRAM, the cards have gotten much faster to accommodate larger fans. I have a 1000 Watt power supply but find myself limited by the fat graphics cards being produced. Does one need to buy a "1-slot" graphics card that takes up only 2-slots on the motherboard?

"1 slot" Graphic cards are typically low end stuff. Unless you get a watercooled card.

 

Most cards take up 2 slots and sure they may sometimes be a bit thicker... but it shouldn't pose a problem in most cases. Is there a reason why you don't want a thick card? Not sure what your PSU has to do in this.

hate to send you down this path, but you could always water cool your GPU, would cut down on the air cooler clutter if you need those slots. Even if you're using a 2 slot card if you're using the slot below with a large enough card you could still have issues with airflow on your GPU.

The problem is a lot of those 2.25 or 2.5 slot cards will consume an entire third slot with the bracket meaning you have to either mod the bracket so it's only 2 slots (or 1 depending) if you want to get two GPUs into a two slot space.
