An i7 6700 is enough for your build. I would suggest only upgrading when you really need to. 

PC:

 

CPU: AMD Ryzen 5 2600

GPU: MSI GTX 1070 8GB

Storage: WD Blue 1TB HDD, WD Blue 500GB SSD

CPU Cooler: NZXT Kraken m22 AIO Cooler

RAM: 16GB 2666MHz HyperX Fury

Yes, an RTX 2070 should last as being recent for quite some time. I would recommend waiting for newer launches of CPUs before upgrading. Are you using an SSD in your system as the boot drive, or an HDD? If you don't have an SSD yet, I would highly suggest adding one because it will significantly increase the responsiveness of your computer system.

yea ive got a 120gb ssd with windows on it

Yeah, that's more than enough. You could always upgrade to an RTX 2080, but I personally don't think you need it.

You may see a read/write performance benefit adding another 120gb SSD in RAID 0 if you are using the SSD for the OS only and/or for data caching, don't use RAID 0 if you want to store any valuable data on the SSD. I would recommend using the hard disk for files and programs and 2 SSDs in RAID 0 for the OS and/or as a high-speed cache.

 

The best practice would be to keep a backup of your important data off-site and another backup copy onsite on a separate system (RAID 1 or similar on the same system is not considered as another backup onsite).
