unless you are referring to every single Ryzen 5 CPU, in which case the best performer is the 3600X

The 3500x is 6 core, 6 thread and 3.6GHz base, 4.1GHz boost. The 2600x is 6 core, 12 thread and 3.6GHz base, 4.2GHz boost. More threads makes the 2600x a better workstation cpu. and its got the same base clock and a better boost clock, meaning it is also a better gaming CPU. Also im pretty sure the 3500x can only be bought in china? so unless you live there it will either be really hard to find or cost alot to ship. So as far as I am aware the 2600x is the best choice.

 

Edit: The 3500x has a lower TDP (65 Watts to the 2600x's 95 Watts) so that could influence your decision i guess? And its newer so its probably likely to hold value for longer if you plan to upgrade in the nearish future.
